This Keto Chicken Salad with Berries and Walnuts whips up quickly and will put a bit of fresh crunch in your life.

I have been desperate for something with a little crunch to it.  This zesty, creamy, crunchy Keto Chicken Salad was the delight of my low carb life this past week.

It’s flavor is sunny savory/sweet and I’m certain I will be making it all summer.

Often tons of pre-planning and prep go into making a really good low carb / keto meal.  Gratefully the Strawberry Walnut Chicken Salad is simple to make.

It’s especially great if you have any roasted chicken in the fridge waiting to be ‘made-over’ into something wonderful.  (And a few strawberries too!)

The dressing is a super simple to make.  It tastes like a bit of sunshine and lemon.  It adds tang and balances the sweetness of the strawberries.

It’s perfect to pack in a lunch bag or take along for a picnic.  I wouldn’t hesitate to take it as an offering for a party. If it does go to the party, no one but you will know how low carb it is.

Here’s a serving suggestion I’ve used at a summer picnic: It looks fabulous as a two-bite appetizer on baby lettuce leaves.

So how low is it?  It is 1.8 net carbs a serving. It’s surprisingly low for an entire 1/4th of the recipe as a serving.

Ingredients
  

  • Salad:
  • 1/3  cup  Walnuts  chopped
  • Celery stalks  medium size
  • cup  sliced Strawberries
  • 1/4  cup  Feta cheese crumbles
  • cups  chopped roasted chicken
  • Dressing:
  • tbsp  Original Cream Cheese  softened
  • tbsp  Real Mayonnaise
  • 1 1/2  tbsp  Lemon Juice
  • tsp  . Splenda or Swerve sweetener
  • pinch of salt (opt.

Instructions
 

  • Chop up chicken into bite-size bits.
  • Chop up celery.
  • Slice or chop strawberries and reserve some slices for garnish, if desired.
  • In a small bowl stir together the dressing ingredients. Set aside.
  • Stir together all the ingredients for the salad in a medium mixing bowl.
  • Pour the dressing over the salad and gently stir to coat.
  • Serve immediately and store leftovers in the refrigerator.

Notes

Try raspberries for a tart variation.
